Applesauce Cookies
This simple spice cookie combines applesauce and raisins to create the most cake-like cookie that is sweet, refreshing, and healthy.

- 1 cup sugar
- 1/2 cup 1 stick margarine or butter
- 1 egg
- 2 tsp baking soda
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 tsp cinnamon
- 1 1/2 cups applesauce unsweetened
- 1 cup raisins
- 1 cup nuts optional
Preheat oven to 350 degrees F. Prep a pan or cookie sheet with liners or non-stick oil.
Cream together sugar, margarine, and egg.
In a separate bowl, combine baking soda, flour, salt, and cinnamon. Mix well.
Stir flour mixture into shortening mixture until just moist.
Add applesauce, raisins, and nuts (if using) and mix well.
Use a heaping tablespoon to drop dough an inch apart on a greased baking sheet.
Bake for 10 to 12 minutes.
