Ingredients

canned apricots
drained and diced

large tomato
chopped

bell pepper
chopped

onion

lime juice

cilantro
chopped

diced serrano pepper or cayenne powder to taste
Instructions
Combine all ingredients besides lime juice, salt, and pepper in a large bowl. Add remaining ingredients and stir gently to mix.
Serve immediately or refrigerate within 2 hours.
Notes
This delicious salsa pairs perfectly with whole-wheat chips, grilled meats, or fish!
