Cut off the ends of the bok choy, then wash and pat dry with paper towels.
Heat a large skillet over medium-high heat. Add in the oil, then the diced onion and minced garlic. Cook for about 1 minute.
Add in the peanut butter, water, fish or soy sauce, vinegar, and brown sugar. Mix well to combine, then allow to simmer on low heat until the sauce thickens, about 30 seconds.
Increase the heat back to medium-high, then stir in the bok choy. Cook until the bok choy is tender, about 2 minutes.
Top with chopped peanuts and serve immediately. Refrigerate leftovers within 2 hours.
