Canned Salmon Pasta
This pasta recipe comes together quickly and can be made with canned salmon or tuna!

Ingredients

lb
whole wheat uncooked pasta
1
Tbsp
vegetable oil
4
cloves
garlic
minced or 1/2 tsp garlic powder

canned salmon
1
lemon
juiced and zest
1
Tbsp
fresh parsley
chopped or 1 tsp dried parsley
Salt and pepper to taste
Parmesan for topping
or cheese of choice (optional)
Instructions
Cook pasta al dente according to package instructions.
Heat oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
Break up salmon and add it to the pan, then stir in the lemon juice and zest and the chopped parsley.
Once pasta is done cooking, add a few tablespoons of pasta water to the skillet. Drain the pasta and toss with the salmon.
Season with salt and pepper to taste. Top with cheese if desired. Enjoy immediately or refrigerate within 2 hours.
Notes
Other tips for canned salmon:
Use as a salad topping or in the place of canned chicken for a salmon salad sandwich.
Combine canned salmon with taco seasoning, and serve with salsa, corn, and tortillas for an easy weeknight meal.
Opened canned salmon stays fresh in the fridge for 3-4 days.
