Cheesy Pinto Beans

Ingredients
  

  • 1 Tbsp cooking oil
  • 2 15 oz. cans of pinto beans drained and rinsed
  • 1/2 cup water
  • 1 jalapeƱo diced and seeded (optional)
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 1/8 tsp black pepper
  • 1/2 cup shredded cheese
  • Hot sauce optional

Instructions
 

  • Add pinto beans and 1/2 cup of water to the pot. Smash pinto beans with a wooden spoon or potato masher to get a creamier consistency. Add more water if desired.
  • Stir in the smoked paprika, cumin, pepper, and hot sauce. Continue to stir occasionally until the beans are heated through.
  • Add the cheese and stir in until it is melted through. Taste the beans and add more seasoning if desired.
  • Enjoy immediately as is, or over your favorite whole grain. Try brown rice or whole wheat pasta! Refrigerate leftovers within 2 hours.

Notes

Need to add extra protein? Add a cup of cottage cheese to the mashed beans!
