Add pinto beans and 1/2 cup of water to the pot. Smash pinto beans with a wooden spoon or potato masher to get a creamier consistency. Add more water if desired.
Stir in the smoked paprika, cumin, pepper, and hot sauce. Continue to stir occasionally until the beans are heated through.
Add the cheese and stir in until it is melted through. Taste the beans and add more seasoning if desired.
Enjoy immediately as is, or over your favorite whole grain. Try brown rice or whole wheat pasta! Refrigerate leftovers within 2 hours.
Notes
Need to add extra protein? Add a cup of cottage cheese to the mashed beans!
