Florentine Rice Skillet
Try this Italian-inspired twist on a pasta dish by using brown rice instead! Brown rice is a great source of dietary fiber, which helps support digestion, blood sugar control, and heart health.
- 1 ½ cups long grain brown rice dry
- 2 5 oz cans chicken drained
- 2 14.5 oz cans stewed tomatoes
- 2 tsp. Italian seasoning
- 1 10oz bag frozen spinach thawed
- ¼ cup mozzarella cheese shredded (optional)
Prepare rice according to package directions.
Meanwhile, in a large skillet, combine chicken, tomatoes, Italian seasoning, and spinach.
Cook for 4-5 minutes.
Add in cooked rice and ¼ cup of cheese and stir until combined.
