Florentine Rice Skillet

Try this Italian-inspired twist on a pasta dish by using brown rice instead! Brown rice is a great source of dietary fiber, which helps support digestion, blood sugar control, and heart health.

Ingredients
  

  • 1 ½ cups long grain brown rice dry
  • 2 5 oz cans chicken drained
  • 2 14.5 oz cans stewed tomatoes
  • 2 tsp. Italian seasoning
  • 1 10oz bag frozen spinach thawed
  • ¼ cup mozzarella cheese shredded (optional)

Instructions
 

  • Prepare rice according to package directions.
  • Meanwhile, in a large skillet, combine chicken, tomatoes, Italian seasoning, and spinach.
  • Cook for 4-5 minutes.
  • Add in cooked rice and ¼ cup of cheese and stir until combined.
