Microwave Sweet Potato Soup

Ingredients

can of black beans
drained and rinsed

15 oz
can whole kernel corn
drained and rinsed
1
bag of 12-oz cubed sweet potatoes
frozen, steam in bag*
1
32 oz
carton of low-sodium vegetable broth
1
tsp
garlic powder
1
tsp
black pepper
1
tsp
salt
1/4
tsp
dried or fresh thyme
Instructions
Microwave sweet potatoes according to package. Set aside when finished.
Combine corn, beans, seasonings, and broth in a large, microwave-safe bowl. Microwave the mixture on high for 4 minutes.
Add in the sweet potatoes and microwave for 1 minute.
Serve immediately and refrigerate leftovers within 2 hours.
Notes
Note: You can also use cubed fresh sweet potatoes or squash and boil on the stovetop until softened.
