Tomato, Apricot, and Feta Salad

Ingredients
  

  • 1 pound ripe tomatoes
  • 1 can apricots drained
  • Olive oil or vegetable oil
  • 6 oz feta cheese or cheese of preference
  • Small handful of fresh herbs or dried herb of choice to taste

Notes

  1. Cut tomatoes and apricots into bite-sized pieces.
  2. Combine tomatoes, apricots, and chopped fresh or dried herbs of choice in a large bowl.
  3. Season with salt and pepper and drizzle with a bit of olive or vegetable oil. Toss lightly to coat.
  4. Break feta up into small chunks and spread over salad.
  5. Serve immediately or store in the refrigerator within 2 hours.
