Tomato, Apricot, and Feta Salad

Ingredients

ripe tomatoes
1
can apricots
drained
Olive oil or vegetable oil
6
oz
feta cheese
or cheese of preference
Small handful of fresh herbs
or dried herb of choice to taste
Notes
Cut tomatoes and apricots into bite-sized pieces.
Combine tomatoes, apricots, and chopped fresh or dried herbs of choice in a large bowl.
Season with salt and pepper and drizzle with a bit of olive or vegetable oil. Toss lightly to coat.
Break feta up into small chunks and spread over salad.
Serve immediately or store in the refrigerator within 2 hours.
