A fresh, veggie-packed take on classic pizza, these Zucchini Pizza Boats are loaded with savory sauce, gooey cheese, and colorful toppings—all nestled in tender zucchini halves. They're fun and perfect for a light lunch, dinner, or even a kid-friendly snack!
1/2cupassorted, diced veggies (mushrooms, peppers, black or green olives, onions, spinach, etc.)
Instructions
Preheat the oven to 375 F.
Cut each zucchini in half. Use a spoon to scoop out the inside of the zucchini to leave a wall all the way around that’s less than 1-inch thick.
Lightly oil a baking sheet. Arrange the zucchini on the baking sheet cut side up. Sprinkle the zucchini with the kosher salt.
Spoon 1 tbsp of pizza sauce into each zucchini half. Sprinkle each zucchini half with mozzarella cheese, Italian seasoning, parmesan cheese and diced veggies.
Bake for about 17 minutes or until the cheese is hot and bubbly and the zucchini is tender.
