
Chili Pasta
Try this delicious chili pasta! Beef is a great source of iron that helps boost brain function and provides energy. Pinto beans are an excellent source of fiber that help the body with digestion and blood sugar management.
Ingredients
- 1 cup whole grain elbow pasta
- 1 Tbsp olive oil
- 12 oz canned beef drained
- 15.5 oz canned pinto beans low sodium (or any beans!)
- 15.2 oz low sodium canned corn drained
- 14.5 oz canned crushed tomatoes low sodium
- 1 Tbsp cumin
- 1 Tbsp chili powder
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
Instructions
- Wash hands with soap and water.
- Cook pasta according to package instructions, drain and rinse with cold water.
- In the same pot, add beans, corn, tomatoes and spices. Allow all ingredients to cook thoroughly (about 5 minutes).
- Remove from heat, stir in the noodles.
- Enjoy hot or cold!

Want to keep the recipe vegetarian? Skip the beef and add black beans or kidney beans for extra protein.
