
Banana Oat Pancakes
These simple banana oat pancakes are a nutritious and delicious way to start your day! Made with whole ingredients like ripe banana, oats, and eggs, they provide a good balance of fiber, protein, and natural sugars—great for sustained energy and keeping you full longer. Ingredients
- 1 ripe banana
- 2 eggs see note for alteratives
- 1/4 cup oats can use gluten free oats
- 1 pinch salt
- 1 pinch ground cinnamon
- avocado or olive oil spray
- 100% pure maple syrup, honey, fruits, nuts or nut butters (almond butter, peanut butter, etc.)
Instructions
- Mash the banana with a fork. Whisk in the eggs, oats, salt and cinnamon until smooth.
- Place a non-stick pan over medium-low heat. Spray the pan with avocado or olive oil non-stick spray. Add about ¼ cup of batter per pancake to the pan. Cook on one side for about 2 minutes, and the other side for about 30 seconds.
- Serve with your favorite toppings and enjoy!
Notes
Egg alternatives for this recipe:
- Flax egg: mix 3 tablespoons water with 1 tablespoon ground flax. Wait 10 minutes until a gel-like mixture forms. This is a 1:1 substitute for eggs
- Use ¼ cup applesauce or pumpkin puree + 1/4 cup flour to replace 1 egg.
- Use ¼ cup yogurt per egg.
