One-Pot African-Inspired Beef Stew

Ingredients
  

  • 1 beef stew pouch* pre-cooked or ready-to-heat
  • 1 can 15 oz can peas* drained
  • 1 can 15 oz can of sliced carrots* drained
  • 1 medium onion chopped
  • 2 cloves garlic minced (or ½ tsp garlic powder)
  • 1-2 tbsp olive oil or vegetable oil
  • 1/2 tsp combined African-inspired seasonings mixed to preferred taste: paprika, garlic powder, onion powder, cayenne pepper, thyme, salt and pepper
  • 2-3 cups beef broth or water

Instructions
 

  • Prepare the base:
    In a medium saucepan or skillet, heat oil over medium heat. Sauté the onion and garlic until fragrant, about 3-5 minutes.
  • Add beef stew:
    Pour the beef from the stew pouch into the pan. Heat thoroughly according to package instructions, usually 5-7 minutes.
  • Incorporate vegetables:
    Stir in canned peas and carrots. Season with paprika, garlic powder, onion powder, cayenne and thyme. Add salt and pepper to taste. Simmer for 5-10 minutes until heated through, allowing the flavors to mix.
  • Prepare the starch:
    For rice: Cook rice separately according to package instructions. Then plate as base and ladle the stew on top.
    For potato flakes: Bring 1.5 cups of beef broth or water to a boil. Remove from heat, stir in potato flakes, cover and let sit for 1-2 minutes. Fluff with a fork, then mix in a portion of your heated vegetable beef stew.
  • Enjoy warm! Store leftovers in the fridge for up to 3-4 days.
