
Cheesy Pinto Beans
Ingredients
- 1 Tbsp cooking oil
- 2 15 oz. cans of pinto beans drained and rinsed
- 1/2 cup water
- 1 jalapeño diced and seeded (optional)
- 1/4 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp ground cumin
- 1/8 tsp black pepper
- 1/2 cup shredded cheese
- Hot sauce optional
Instructions
- Add pinto beans and 1/2 cup of water to the pot. Smash pinto beans with a wooden spoon or potato masher to get a creamier consistency. Add more water if desired.
- Stir in the smoked paprika, cumin, pepper, and hot sauce. Continue to stir occasionally until the beans are heated through.
- Add the cheese and stir in until it is melted through. Taste the beans and add more seasoning if desired.
- Enjoy immediately as is, or over your favorite whole grain. Try brown rice or whole wheat pasta! Refrigerate leftovers within 2 hours.
Notes
Need to add extra protein? Add a cup of cottage cheese to the mashed beans!
