Microwave Sweet Potato Soup

Ingredients
  

  • 1 15 oz can of black beans drained and rinsed
  • 1 15 oz can whole kernel corn drained and rinsed
  • 1 bag of 12-oz cubed sweet potatoes frozen, steam in bag*
  • 1 32 oz carton of low-sodium vegetable broth
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/4 tsp dried or fresh thyme

Instructions
 

  • Microwave sweet potatoes according to package. Set aside when finished.
  • Combine corn, beans, seasonings, and broth in a large, microwave-safe bowl. Microwave the mixture on high for 4 minutes.
  • Add in the sweet potatoes and microwave for 1 minute.
  • Serve immediately and refrigerate leftovers within 2 hours.

Notes

Note: You can also use cubed fresh sweet potatoes or squash and boil on the stovetop until softened.
