  • 5 medium Roma tomatoes diced into 1 cm pieces
  • 1 English cucumber diced into 1 cm pieces
  • 1 Red bell pepper cored and deveined, diced into 1 cm pieces
  • 5 green onions finely sliced
  • 3 tbsp Olive oil
  • 1 cup Flat leaf parsley finely chopped
  • 1/2 cup Mint leaves shredded (optional)
  • 1 clove Garlic minced
  • 2 tbsp Lemon zest
  • 3 tbsp Lemon juice
  • Salt and black pepper


  • Drain the chopped tomatoes and place them in a large bowl.
  • Add the rest of the ingredients.
  • Mix well and taste. Add salt and black pepper to taste.
  • Serve with your choice of grains, protein, and dairy.
