Canned Salmon Pasta

This pasta recipe comes together quickly and can be made with canned salmon or tuna!

Ingredients
  

  • 1 lb whole wheat uncooked pasta
  • 1 Tbsp vegetable oil
  • 4 cloves garlic minced or 1/2 tsp garlic powder
  • 15 oz canned salmon
  • 1 lemon juiced and zest
  • 1 Tbsp fresh parsley chopped or 1 tsp dried parsley
  • Salt and pepper to taste
  • Parmesan for topping or cheese of choice (optional)

Instructions
 

  • Cook pasta al dente according to package instructions.
  • Heat oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
  • Break up salmon and add it to the pan, then stir in the lemon juice and zest and the chopped parsley.
  • Once pasta is done cooking, add a few tablespoons of pasta water to the skillet. Drain the pasta and toss with the salmon.
  • Season with salt and pepper to taste. Top with cheese if desired. Enjoy immediately or refrigerate within 2 hours.

Notes

Other tips for canned salmon:
  • Use as a salad topping or in the place of canned chicken for a salmon salad sandwich.
  • Combine canned salmon with taco seasoning, and serve with salsa, corn, and tortillas for an easy weeknight meal.
  • Opened canned salmon stays fresh in the fridge for 3-4 days.
