
Collard Greens with Smoked Turkey
Keep traditions going with this savory collard green recipe! This recipe allows you to keep that awesome taste but also highlights lean sources of protein – like turkey! This recipe is also low in saturated fats and high in vitamin A&C.
Ingredients
- 1 bunch about 1 lb collard greens, washed and chopped
- 4 cups low-sodium chicken broth or water
- 1 small smoked turkey leg or wing-found in the HTF mobile market
- 1 small onion chopped
- 2 cloves garlic minced
- 1 teaspoon olive oil
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes optional
- 1 teaspoon apple cider vinegar Or white Vinegar
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add the smoked turkey and pour in the broth. Bring to a boil, then reduce to a simmer for 10 minutes.
- Add chopped collard greens, black pepper, and red pepper flakes. Stir well.
- Cover and let simmer for about 45 minutes to 1 hour, stirring occasionally, until greens are tender.
- Remove the turkey leg, shred the meat, and stir it back into the greens.
- Add apple cider vinegar, adjust seasoning, and serve warm.
