
Microwave Sweet Potato Soup
Short on time? This easy and healthy recipe comes together in under 15 minutes.
Ingredients
- 1 15 oz can of black beans drained and rinsed
- 1 15 oz can whole kernel corn drained and rinsed
- 1 bag of 12-oz cubed sweet potatoes frozen, steam in bag*
- 1 32 oz carton of low-sodium vegetable broth
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp salt
- 1/4 tsp dried or fresh thyme
Instructions
- Microwave sweet potatoes according to package. Set aside when finished.
- Combine corn, beans, seasonings, and broth in a large, microwave-safe bowl. Microwave the mixture on high for 4 minutes.
- Add in the sweet potatoes and microwave for 1 minute.
- Serve immediately and refrigerate leftovers within 2 hours.
Notes
Note: You can also use cubed fresh sweet potatoes or squash and boil on the stovetop until softened.
