Shrimp Pasta with Mozzarella

Looking for a quick fix? This tasty recipe is quick and easy to make and many of the ingredients can be found in your pantry. Make it your own by switching out some of the ingredients.

Ingredients
  

  • 1 pound Shrimp thawed
  • 8 ounces Spaghetti or pasta noodle of choice
  • 1/2 cup Milk
  • 2 tbsp Vegetable oil separated
  • 1/4 cup Mozzarella cheese shredded
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Salt
  • 1 cup Spinach or greens of choice
  • 1 tbsp Flour or corn starch optional
  • Red pepper flakes optional

Instructions
 

  • Cook the pasta: bring a large pot of water to a boil, add the pasta, and cook according to package instructions. Drain, add 1 tablespoon vegetable oil, set aside. TIP: While pasta is cooking, continue with steps 2-4.
  • In a large pan, heat 1 tablespoon oil over medium-low. Add shrimp.
  • Cook the shrimp on medium-low, stirring often until shrimp turns pink or golden brown.
  • Remove shrimp and set aside. Drain excess liquid if needed. Add one tablespoon oil and spinach to pan on low heat.
  • Once spinach is cooked (leaves are tender and wilted), keep spinach in pan and add pasta.
  • Add shrimp and mozzarella cheese to pan on low heat. Mix well as mozzarella melts.
  • Add ¼ cup milk. Mix. Continue adding milk until pasta reaches creaminess of preference. If sauce is too runny, add a tablespoon of flour, cornstarch, or cheese. If pasta is too thick, continue to add milk in small amounts.
  • Add garlic powder, salt and onion powder. Gently stir until all ingredients are well-mixed. Salt and pepper to taste.
