
Zucchini Pizza Boats
A fresh, veggie-packed take on classic pizza, these Zucchini Pizza Boats are loaded with savory sauce, gooey cheese, and colorful toppings—all nestled in tender zucchini halves. They're fun and perfect for a light lunch, dinner, or even a kid-friendly snack!
Ingredients
- 6 medium zucchinis
- 1 tbsp olive oil or just enough to coat baking sheet
- 1/2 tsp salt
- 1 cup pizza sauce see Hunger Task Force's "Easy Pizza Sauce" recipe
- 2 cups shredded cheese
- 1 tsp Italian seasoning
- 1/2 cup grated parmesan cheese
- 1/2 cup assorted, diced veggies (mushrooms, peppers, black or green olives, onions, spinach, etc.)
Instructions
- Preheat the oven to 375 F.
- Cut each zucchini in half. Use a spoon to scoop out the inside of the zucchini to leave a wall all the way around that’s less than 1-inch thick.
- Lightly oil a baking sheet. Arrange the zucchini on the baking sheet cut side up. Sprinkle the zucchini with the kosher salt.
- Spoon 1 tbsp of pizza sauce into each zucchini half. Sprinkle each zucchini half with mozzarella cheese, Italian seasoning, parmesan cheese and diced veggies.
- Bake for about 17 minutes or until the cheese is hot and bubbly and the zucchini is tender.
Notes
Storage: Before baking, can store prepped zucchini in the fridge for up to 24 hours. After baking, can store cooled, assembled and baked zucchini boats in the fridge for up to 3-4 days.
