Apricot Salsa

Ingredients
  

  • 1 cup canned apricots drained and diced
  • 1 large tomato chopped
  • 1 bell pepper chopped
  • 1/2 cup onion chopped
  • 1 Tbsp lime juice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup cilantro chopped
  • 1 diced serrano pepper or cayenne powder to taste

Instructions
 

  • Combine all ingredients besides lime juice, salt, and pepper in a large bowl. Add remaining ingredients and stir gently to mix.
  • Serve immediately or refrigerate within 2 hours.

Notes

This delicious salsa pairs perfectly with whole-wheat chips, grilled meats, or fish!
