
Greek Yogurt Protein Salad
Enjoy this protein-rich salad that uses Greek yogurt instead of mayonnaise. Lower calories doesn't have to mean less flavor!
Ingredients
Dressing
- 1/2 cup Greek yogurt
- 1 clove garlic minced, or 1/4 tsp garlic powder
- 2 Tbsp lemon juice
- 1 Tbsp olive or vegetable oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup fresh dill chopped or 2 Tbsp dried dill
Salad
- 6 oz chopped leafy greens
- 1 15 oz canned beans of choice rinsed, drained
- 1 6 oz can of salmon tuna, or chicken, drained
- 1/4 red onion chopped (optional)
Instructions
Dressing
- In a small bowl, whisk all ingredients until well-incorporated
Salad
- Finely chop the greens and dice the onion if using. In a medium bowl, add the greens, onion, beans, and canned protein.
- Serve with dressing on side, or mix with dressing.
- Enjoy immediately or refrigerate within 2 hours.
