Greek Yogurt Protein Salad

Enjoy this protein-rich salad that uses Greek yogurt instead of mayonnaise. Lower calories doesn't have to mean less flavor!

Ingredients
  

Dressing

  • 1/2 cup Greek yogurt
  • 1 clove garlic minced, or 1/4 tsp garlic powder
  • 2 Tbsp lemon juice
  • 1 Tbsp olive or vegetable oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh dill chopped or 2 Tbsp dried dill

Salad

  • 6 oz chopped leafy greens
  • 1 15 oz canned beans of choice rinsed, drained
  • 1 6 oz can of salmon tuna, or chicken, drained
  • 1/4 red onion chopped (optional)

Instructions
 

Dressing

  • In a small bowl, whisk all ingredients until well-incorporated

Salad

  • Finely chop the greens and dice the onion if using. In a medium bowl, add the greens, onion, beans, and canned protein.
  • Serve with dressing on side, or mix with dressing.
  • Enjoy immediately or refrigerate within 2 hours.
