
One-Pot African-Inspired Beef Stew
This cozy, aromatic one-pot meal delivers big flavor and wholesome nutrition in every bite. Easy, satisfying and perfect for cooking for one or sharing with the whole household.
Ingredients
- 1 beef stew pouch* pre-cooked or ready-to-heat
- 1 can 15 oz can peas* drained
- 1 can 15 oz can of sliced carrots* drained
- 1 medium onion chopped
- 2 cloves garlic minced (or ½ tsp garlic powder)
- 1-2 tbsp olive oil or vegetable oil
- 1/2 tsp combined African-inspired seasonings mixed to preferred taste: paprika, garlic powder, onion powder, cayenne pepper, thyme, salt and pepper
- 2-3 cups beef broth or water
Instructions
- Prepare the base:In a medium saucepan or skillet, heat oil over medium heat. Sauté the onion and garlic until fragrant, about 3-5 minutes.
- Add beef stew:Pour the beef from the stew pouch into the pan. Heat thoroughly according to package instructions, usually 5-7 minutes.
- Incorporate vegetables:Stir in canned peas and carrots. Season with paprika, garlic powder, onion powder, cayenne and thyme. Add salt and pepper to taste. Simmer for 5-10 minutes until heated through, allowing the flavors to mix.
- Prepare the starch: For rice: Cook rice separately according to package instructions. Then plate as base and ladle the stew on top. For potato flakes: Bring 1.5 cups of beef broth or water to a boil. Remove from heat, stir in potato flakes, cover and let sit for 1-2 minutes. Fluff with a fork, then mix in a portion of your heated vegetable beef stew.
